However, we can only exploit these major protein components if they are split into single components (amino acids). The more dissimilar the animals are to humans, the easier it is to digest the protein i.e. when split into single amino acids, our organism can better use these protein components to form new structures.
Protein chains, however, are not usable for our organism; In fact, they put strain on it. This means that the protein of fish, shellfish and poultry can easily be split and exploited by our organism because they are very dissimilar to humans. Meat from mammals, which belong generically to humans, is not digestible; Particularly pork as its protein structure is the most similar to humans.
With regard to BSE, hormone- and antibiotic-contaminated meat, you should only buy meat from organic farmers. Always choose meat of wildlife animals such as game, pheasants and Galloway or Bison cattle.
The proper raising of chickens is also important to the quality of the eggs. Studies with eggs from free-range hens and eggs from cave hens have serious differences. The protein of the eggs, similar to poultry's is easily utilized by our organism. The egg yolk contains vitamins in large doses and valuable micro elements.
